Analytics: Google Analytics 4, from Google Ireland Limited, is used to know how many people visit the site and which pages they read. It sets the _ga and _ga_<id> cookies, which last up to two years and serve to tell one visit from another.

Those cookies are not set until you accept them in the notice. Until then, measurement runs without cookies and without identifying you. Google may process the data outside the European Economic Area, under the EU-US Data Privacy Framework.

Booking engine: once the online booking engine is switched on it may set its own technical cookies. They will be listed here at that point, and consent requested if required.
